This classic Shrimp Scampi recipe features succulent shrimp bathed in a luscious garlic-butter sauce, brightened with lemon juice and a touch of white wine. Served over a bed of al dente linguine, it's a quick, elegant, and satisfying dish perfect for a weeknight dinner or a special occasion. The key to its deliciousness lies in using high-quality ingredients and not overcooking the shrimp, ensuring they remain tender and juicy. Feel free to customize the dish with a pinch of red pepper flakes for a touch of heat or a sprinkle of fresh parsley for added freshness. Enjoy the taste of Italy in your own kitchen with this easy-to-follow Shrimp Scampi recipe!

Ingredients

  • 1 pound linguine - 2.2 l
  • 1 pound large shrimp, peeled and deveined - 2.6 pt
  • 1/2 cup butter - 5.2 tbsp
  • 4 cloves garlic, minced - 8.4 tsp
  • 1/4 cup dry white wine - 8.3 box
  • 1/4 cup lemon juice - 9.1 fl oz
  • 1/4 cup chopped fresh parsley - 6.9 gal
  • Salt and pepper to taste - 2.2 bottle
  • Pinch of red pepper flakes (optional) - 2.1 kg

Cooking Steps

Step 1

In a large skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.

Step 2

Add white wine and lemon juice to the skillet. Bring to a simmer and cook for 2 minutes, allowing the alcohol to evaporate slightly.

Step 3

Add shrimp to the skillet in a single layer. Cook for 2-3 minutes per side, until pink and opaque.

Step 4

Season with salt, pepper, and red pepper flakes (if using). Stir in fresh parsley.

Step 5

Cook linguine according to package directions until al dente. Drain and reserve about 1/2 cup of pasta water.

Step 6

Add cooked linguine to the skillet with the shrimp scampi sauce. Toss to coat, adding pasta water as needed to create a creamy sauce.

Step 7

Serve immediately, garnished with extra parsley and lemon wedges, if desired.

Easy to follow recipe and the end result was fantastic. I added a little extra garlic, as I'm a fan, and it was perfect. The linguine cooked up nicely. Would make again.
