Ingredients

  • 1 pound spaghetti - 3.3 jar
  • 4 ounces guanciale or pancetta, diced - 6.3 to taste
  • 3 large eggs - 6.0 cm
  • 2 large egg yolks - 5.3 half
  • 1 cup grated Pecorino Romano cheese, plus more for serving - 3.0 cup
  • Freshly ground black pepper, to taste - 4.7 oz
  • Salt, for pasta water - 0.7 can

Cooking Steps

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente, reserving about 1 cup of pasta water before draining.

Step 2

While the pasta is cooking, dice the guanciale (or pancetta) into small pieces.

Step 3

In a large skillet, cook the guanciale over medium heat until crispy and golden brown. Remove from heat and set aside, reserving the rendered fat in the pan.

Step 4

In a mixing bowl, whisk together the eggs, egg yolks, grated Pecorino Romano cheese, and black pepper until well combined.

Step 5

Drain the spaghetti and add it to the skillet with the rendered guanciale fat. Toss to coat.

Step 6

Remove the skillet from the heat and pour the egg mixture over the hot spaghetti. Toss quickly and continuously to create a creamy sauce. Add a little reserved pasta water at a time if the sauce is too thick, until it reaches your desired consistency.

Step 7

Serve immediately, garnished with additional grated Pecorino Romano cheese and black pepper.
