This classic Spaghetti Carbonara recipe is a creamy, comforting, and utterly delicious dish that comes together quickly. The sauce is made with eggs, Pecorino Romano cheese, guanciale, and black pepper, creating a rich and savory flavor. The key to a great carbonara is to cook the spaghetti al dente and emulsify the sauce properly. Serve immediately for the best taste and texture. It is a simple, satisfying meal perfect for a weeknight dinner, and a guaranteed crowd-pleaser for any gathering.

Ingredients

  • 1 pound spaghetti - 4.2 gal
  • 4 ounces guanciale, diced - 5.3 pt
  • 3 large eggs - 9.7 to taste
  • 2 large egg yolks - 1.2 mg
  • 1 cup grated Pecorino Romano cheese, plus more for serving - 4.2 quarter
  • Freshly ground black pepper, to taste - 9.3 can
  • Salt, for pasta water - 1.7 inch
4 Servings

Cooking Steps

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Reserve about 1 cup of pasta water before draining.

Step 2

While the pasta is cooking, dice the guanciale into small pieces. In a large skillet, cook the guanciale over medium heat until crispy. Remove the guanciale with a slotted spoon and set aside, reserving the rendered fat in the skillet.

Step 3

In a mixing bowl, whisk together the eggs, egg yolks, grated Pecorino Romano cheese, and black pepper until well combined.

Step 4

Drain the spaghetti and add it directly to the skillet with the reserved guanciale fat. Toss to coat.

Step 5

Remove the skillet from the heat. Immediately pour the egg and cheese mixture over the hot spaghetti. Toss quickly and continuously to create a creamy sauce. Add a little of the reserved pasta water at a time if the sauce is too thick.

Step 6

Add the crispy guanciale to the pasta and toss to combine.

Step 7

Serve immediately, garnished with additional grated Pecorino Romano cheese and black pepper.

This recipe is a game changer! The simplicity of the ingredients combined with the rich, complex flavor is incredible. My family devoured it. The instructions were clear enough to get a perfectly emulsified sauce. Highly recommend!

Very good. I loved how quickly it came together. The flavors were spot on. I might add a bit more black pepper next time for an extra kick. Overall, a great weeknight meal.

Unfortunately, my sauce split, and it wasn't creamy at all. I'm not sure what went wrong, but I'll have to experiment more with the temperature and the emulsification process. The flavor was there, but the texture ruined the experience.

A decent recipe, but a little bland. I added a pinch of red pepper flakes to give it some extra heat. I think it could benefit from a little more seasoning in general. The cooking time of the pasta was perfect.

Best carbonara recipe I've tried! The balance of flavors is perfect, and the dish is so easy to make. The crispy guanciale really elevates it. This will definitely become a regular meal in our household.
