In a large Dutch oven or heavy-bottomed pot, heat the olive oil and butter over medium-high heat. Brown the chicken pieces in batches, ensuring not to overcrowd the pot. Remove the chicken and set aside.
Add the bacon to the pot and cook until crisp. Remove the bacon and set aside, leaving the rendered fat in the pot.
Add the onions and mushrooms to the pot and cook until softened, about 5-7 minutes. Stir in the garlic and cook for another minute until fragrant.
Pour in the brandy (if using) and scrape up any browned bits from the bottom of the pot. Return the chicken and bacon to the pot.
Pour in the red wine and chicken broth. Add the thyme, bay leaf, and tomato paste. Bring to a simmer, then reduce the heat to low, cover, and simmer for 45 minutes to 1 hour, or until the chicken is tender.
Before serving, remove the bay leaf. Garnish with fresh parsley and serve hot with mashed potatoes, crusty bread, or buttered noodles.
