
Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant. Be careful not to burn the garlic.
Pour in crushed tomatoes, tomato paste, dried oregano, salt, and pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.
Pour a thin layer of tomato sauce into the prepared baking dish. Arrange eggplant slices over the sauce, overlapping slightly if necessary.
Spread another layer of tomato sauce over the eggplant, then top with fresh mozzarella slices and basil leaves.
Repeat layers of eggplant, sauce, mozzarella, and basil until all ingredients are used, finishing with a layer of mozzarella and basil on top.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and the eggplant is tender. Let it cool for 10 minutes before slicing and serving.
Excellent recipe! I followed the instructions to the letter. The sauce was phenomenal. Next time I'll add a bit of red pepper flakes for a little heat, as suggested.
Good recipe. Easy to follow. The only thing I would change is maybe to add more cheese, but that's just personal preference. Otherwise, it was excellent.
