Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion, carrots, and celery and cook until softened, about 5-7 minutes.
Add minced garlic, cumin, coriander, and turmeric. Cook for another minute until fragrant.
Stir in the brown or green lentils, vegetable broth, diced tomatoes, and bay leaf. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
Remove the bay leaf. Use an immersion blender to partially blend the soup, leaving some chunks for texture (optional).
Stir in lemon juice and chopped parsley. Season with salt and pepper to taste.
Serve hot, garnished with a dollop of yogurt or a sprinkle of fresh parsley, if desired.
Enjoy!
A solid lentil soup recipe. I appreciated how customizable it was. I added carrots, celery, and a bay leaf. It simmered for about an hour and the flavors really developed. Will make again.
Simple and delicious! This soup is perfect for a quick and healthy meal. I love how customizable it is. I added some cumin and coriander, and it tasted amazing.
Really enjoyed this. I added a little bit of red pepper flakes for a bit of heat. Next time, I'll try adding some sausage. The texture was perfect. Great recipe!
This is a fantastic recipe. So flavorful and comforting. The perfect meal for a cold day. I followed the recipe exactly and it turned out great. Love it!
It was a good soup, but I found it a little bland. I think I might need to be more generous with the spices next time. The lentils cooked perfectly though.
