Ingredients

  • 1 tablespoon olive oil - 10.2 half
  • 1 onion, chopped - 6.2 l
  • 2 carrots, chopped - 10.3 oz
  • 2 celery stalks, chopped - 9.6 cup
  • 2 cloves garlic, minced - 5.4 mg
  • 1 teaspoon cumin - 6.1 tsp
  • 1/2 teaspoon coriander - 3.9 quarter
  • 1/4 teaspoon smoked paprika - 9.2 pinch
  • 1 cup brown or green lentils, rinsed - 5.9 l
  • 1 (14.5 ounce) can diced tomatoes, undrained - 6.9 to taste

Cooking Steps

Step 1

Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery and cook until softened, about 5-7 minutes.

Step 2

Add minced garlic, cumin, coriander, and smoked paprika. Cook for 1 minute until fragrant.

Step 3

Add lentils, diced tomatoes, vegetable broth, and bay leaf. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.

Step 4

Remove bay leaf and season with salt and pepper to taste.

Step 5

If desired, use an immersion blender to partially blend the soup for a creamier texture.

Step 6

Stir in chopped parsley and lemon juice (if using).

Step 7

Serve hot, garnished with a dollop of yogurt or a sprinkle of fresh herbs.
