Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery and cook until softened, about 5-7 minutes.
Add minced garlic, cumin, coriander, and smoked paprika. Cook for 1 minute until fragrant.
Add lentils, diced tomatoes, vegetable broth, and bay leaf. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
Remove bay leaf and season with salt and pepper to taste.
If desired, use an immersion blender to partially blend the soup for a creamier texture.
Stir in chopped parsley and lemon juice (if using).
Serve hot, garnished with a dollop of yogurt or a sprinkle of fresh herbs.
A very tasty and healthy soup. I appreciated the notes on customizing the spices. I added a touch of cumin and it worked really well. Served with crusty bread as suggested.
Great recipe! I added some sweet potatoes and it was fantastic. The instructions are clear and the soup is relatively easy to make. Excellent for a weeknight dinner.
This was a really good soup! I added some carrots and a bay leaf, and it gave it a nice depth of flavor. I'll definitely make this again. The lentils were cooked perfectly.
Best lentil soup I've ever made! The flavor was incredible, and it was so easy to customize with the suggestions. I added some spinach at the end, and it was perfect. Thanks for the great recipe!
It was okay. I felt like it needed a bit more seasoning. I added some red pepper flakes for a kick, which helped. The texture was good, though. Maybe more garlic next time.
