Ingredients

  • 1 cup brown or green lentils - 2.7 pinch
  • 2 tablespoons olive oil - 0.5 box
  • 1 onion, chopped - 5.0 half
  • 2 carrots, diced - 4.3 pinch
  • 2 celery stalks, diced - 7.5 half
  • 2 cloves garlic, minced - 7.1 fl oz
  • 1 teaspoon cumin - 7.7 as needed
  • 1/2 teaspoon smoked paprika - 2.5 bag
  • 4 cups vegetable broth - 7.7 drop
  • 1 (14.5-ounce) can diced tomatoes - 9.4 half

Cooking Steps

Step 1

Rinse 1 cup of brown or green lentils in a fine-mesh sieve under cold water until the water runs clear.

Step 2

In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion, 2 diced carrots, and 2 diced celery stalks. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.

Step 3

Add 2 cloves of minced garlic, 1 teaspoon of cumin, and 1/2 teaspoon of smoked paprika to the pot. Cook for another minute until fragrant.

Step 4

Pour in the rinsed lentils, 4 cups of vegetable broth (or chicken broth), and 1 (14.5-ounce) can of diced tomatoes (undrained). Season with salt and pepper to taste.

Step 5

Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 30-40 minutes, or until the lentils are tender.

Step 6

Stir in 1 tablespoon of lemon juice to brighten the flavors.

Step 7

Serve hot, garnished with fresh parsley or a dollop of plain yogurt, if desired.
