Preheat your oven to 400°F (200°C). Rinse the chicken inside and out and pat it dry with paper towels.
In a small bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, salt, and pepper. Mix well.
Rub the herb mixture all over the chicken, including under the skin of the breast. Place the lemon halves inside the chicken cavity.
Arrange the carrots, potatoes, and onion in a roasting pan. Place the chicken on top of the vegetables.
Roast the chicken for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C). Baste the chicken with pan juices every 20 minutes.
Let the chicken rest for 10 minutes before carving. Serve the chicken with the roasted vegetables and pan juices.
Garnish with fresh herbs, such as parsley or thyme, for an extra touch of freshness and visual appeal.
The chicken was alright. I think I might have added too many herbs, as the flavor was a little strong. It was still edible, just not my favorite.
Very tasty chicken. The instructions were simple to understand. I used rosemary and thyme, which went well with the lemon. A solid weeknight meal.
The chicken was cooked well, but I found the lemon flavor a bit overpowering. Next time, I'll probably use less lemon zest. Otherwise, a decent recipe.
Easy to follow recipe and the chicken turned out great. I added some potatoes and carrots to the roasting pan, and they were delicious too. The herbs really made a difference.
Best roasted chicken I've ever made! The skin was so crispy, and the meat was incredibly juicy. The lemon and herbs combined perfectly. A must-try recipe!
