Preheat your oven to 400°F (200°C). Rinse the chicken inside and out and pat it dry with paper towels.
In a small bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, salt, and pepper. Mix well.
Rub the herb mixture all over the chicken, including under the skin of the breast. Place the lemon halves inside the chicken cavity.
Arrange the carrots, potatoes, and onion in a roasting pan. Place the chicken on top of the vegetables.
Roast the chicken for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C). Baste the chicken with pan juices every 20 minutes.
Let the chicken rest for 10 minutes before carving. Serve the chicken with the roasted vegetables and pan juices.
Garnish with fresh herbs, such as parsley or thyme, for an extra touch of freshness and visual appeal.
Outstanding! The chicken was cooked to perfection. The skin was golden and crispy, and the meat was incredibly moist. The herb blend was spot on!
Easy to make and delicious. I like that you can customize the herbs to your preference. I tried it with sage and thyme, and it was a hit.
It was good, but not amazing. The chicken was a little dry, maybe I cooked it too long. The flavor was nice, but I think I'll try a different herb blend next time.
Absolutely fantastic! The chicken was so juicy and the skin was perfectly crispy. The lemon and herb flavors were perfectly balanced. My family loved it!
This recipe is absolutely perfect! The chicken was juicy, flavorful, and had a beautiful crispy skin. I made this for a dinner party, and everyone loved it!
