Ingredients

  • 1 whole chicken (about 3-4 pounds) - 7.0 half
  • 2 tablespoons olive oil - 2.5 to taste
  • Zest and juice of 1 lemon - 2.9 pcs
  • 2 cloves garlic, minced - 10.2 quarter
  • 2 tablespoons chopped fresh rosemary - 1.5 as needed
  • 2 tablespoons chopped fresh thyme - 6.5 ml
  • Salt and pepper to taste - 1.5 box
  • 1 lemon, halved - 8.7 package
  • 4 cloves garlic, unpeeled - 9.5 tsp
  • 1 pound carrots, chopped - 1.0 dash

Cooking Steps

Step 1

Preheat your oven to 400°F (200°C). Rinse the chicken inside and out and pat it dry with paper towels.

Step 2

In a small bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, salt, and pepper.

Step 3

Rub the herb mixture all over the chicken, making sure to get some under the skin of the breast and thighs. This will infuse the chicken with flavor and help keep it moist.

Step 4

Place the lemon halves and garlic cloves inside the cavity of the chicken. This will add extra flavor and aroma as the chicken roasts.

Step 5

Place the chicken in a roasting pan and arrange the carrots and potatoes around it.

Step 6

Roast for 45-60 minutes, or until the chicken is cooked through and the juices run clear when you pierce the thickest part of the thigh with a fork.

Step 7

Let the chicken rest for 10 minutes before carving and serving. This allows the juices to redistribute, resulting in a more tender and flavorful chicken.
