Place the chicken in a roasting pan and arrange the quartered potatoes and carrots around the chicken.
Roast for 45-60 minutes, or until the chicken is cooked through and the juices run clear when pierced with a fork or knife.
Let the chicken rest for 10 minutes before carving and serving.
Serve with the roasted potatoes and carrots.
