Preheat oven to 400°F (200°C). Rinse the chicken inside and out and pat dry with paper towels.
In a small bowl, combine softened butter, minced garlic, lemon zest, chopped rosemary, thyme, salt, and pepper.
Loosen the skin of the chicken breast by gently sliding your fingers between the skin and the meat. Spread half of the herb butter mixture under the skin, directly onto the breast meat.
Rub the remaining herb butter mixture all over the outside of the chicken. Place the lemon halves and garlic cloves inside the cavity of the chicken.
Place the chicken in a roasting pan. Roast for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
Let the chicken rest for 10 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful bird.
Carve the chicken and serve with your favorite side dishes. Enjoy!
The chicken was overcooked and dry, despite following the instructions. The flavor was also quite underwhelming. I'm not sure what went wrong.
Really enjoyed this recipe. Easy to follow, and the chicken turned out great. I used rosemary and thyme, and the aroma was amazing.
I found the chicken a bit bland. I followed the recipe exactly, but it just didn't have much flavor. Maybe I needed more herbs.
This recipe is a winner! The lemon really brightens up the dish, and the herbs are perfectly balanced. The chicken was so tender and flavorful. My family loved it!
Simple and tasty. I liked the simplicity of the recipe, perfect for a weeknight dinner. Next time, I'll try adding some potatoes to roast alongside the chicken.
