
Preheat oven to 400°F (200°C). Rinse the chicken inside and out and pat dry with paper towels.
In a small bowl, combine softened butter, minced garlic, lemon zest, chopped rosemary, thyme, salt, and pepper.
Loosen the skin of the chicken breast by gently sliding your fingers between the skin and the meat. Spread half of the herb butter mixture under the skin, directly onto the breast meat.
Rub the remaining herb butter mixture all over the outside of the chicken. Place the lemon halves and garlic cloves inside the cavity of the chicken.
Place the chicken in a roasting pan. Roast for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
Let the chicken rest for 10 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful bird.
Carve the chicken and serve with your favorite side dishes. Enjoy!
It was good, but nothing too special. The chicken was a bit dry in some parts, maybe I cooked it a little too long. The flavor was nice though.
A solid recipe. Easy to follow and the chicken tasted great. I added a bit more garlic, which I think enhanced the flavor. Would make it again.
Simple, but effective. This recipe is a great starting point, and the result is a very tasty chicken. I'm going to experiment with different herb combinations next time.
Best roasted chicken I've ever made! The lemon and herb combination is perfect. The chicken was incredibly juicy and flavorful, and the skin was beautifully browned and crispy. Highly recommend!
