Ingredients

  • 1 whole chicken (about 3-4 pounds) - 5.9 bottle
  • 2 tablespoons olive oil - 3.6 dash
  • 4 cloves garlic, minced - 7.4 drop
  • 2 tablespoons fresh rosemary, chopped - 4.0 oz
  • 2 tablespoons fresh thyme, chopped - 6.9 jar
  • 2 tablespoons fresh parsley, chopped - 6.9 box
  • 1 lemon, zested and juiced - 5.4 oz
  • Salt and black pepper to taste - 10.0 dash
  • 1 lemon, halved - 2.4 mg
  • 4 cloves garlic, unpeeled - 1.0 pt

Cooking Steps

Step 1

Preheat your oven to 400°F (200°C). Prepare the chicken by patting it dry with paper towels. This helps the skin to crisp up during roasting.

Step 2

In a bowl, combine the olive oil, minced garlic, chopped fresh herbs (rosemary, thyme, and parsley), lemon zest, lemon juice, salt, and black pepper. Mix well to create a marinade.

Step 3

Rub the herb mixture all over the chicken, making sure to get some under the skin of the breast. Place the lemon halves and garlic cloves inside the cavity of the chicken.

Step 4

Chop the potatoes, carrots, and onions into large pieces. Toss them with olive oil, salt, and pepper. Spread the vegetables in a single layer in a roasting pan.

Step 5

Place the chicken on top of the vegetables in the roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) in the thickest part of the thigh.

Step 6

Remove the chicken from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful chicken.

Step 7

Carve the chicken and serve with the roasted vegetables. Drizzle any pan juices over the chicken and vegetables for extra flavor. Enjoy!
