Preheat your oven to 400°F (200°C). Prepare a roasting pan by lining it with foil and placing a roasting rack inside.
In a small bowl, combine the softened butter, lemon zest, minced garlic, chopped herbs (parsley, rosemary, and thyme), salt, and pepper. Mix well to form a flavorful herb butter.
Pat the chicken dry with paper towels. Gently loosen the skin of the chicken breast with your fingers, creating a pocket. Spread half of the herb butter mixture under the skin, directly onto the chicken breast meat. Rub the remaining herb butter all over the outside of the chicken.
Place the lemon halves inside the cavity of the chicken. This will infuse the chicken with a subtle citrus aroma as it roasts.
Place the chicken on the prepared roasting rack in the roasting pan. Roast in the preheated oven for about 45 minutes to 1 hour, or until the chicken is cooked through and the juices run clear when a thermometer inserted into the thickest part of the thigh reaches 165°F (74°C).
Once the chicken is cooked, remove it from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful chicken.
Carve the chicken and serve with the pan juices drizzled over the top. Enjoy your delicious Lemon Herb Roasted Chicken!
I was disappointed with this recipe. The chicken was bland and dry. I followed the recipe exactly, but it didn't turn out well.
A solid chicken recipe. It was flavorful and easy to prepare. I found the roasting time was a little longer than expected, but it turned out great.
Best roasted chicken recipe I've ever tried. The lemon and herbs create such a wonderful aroma and flavor. The chicken was so tender. Highly recommend this.
Not a fan. The chicken was very dry and the flavor was quite bland. I followed the recipe to a T, but the results were not good.
Very good! I added some red pepper flakes for a little bit of heat. The chicken was cooked perfectly. I'll be making this again.
