
Preheat your oven to 400°F (200°C). Prepare a roasting pan by lining it with foil and placing a roasting rack inside.
In a small bowl, combine the softened butter, lemon zest, minced garlic, chopped herbs (parsley, rosemary, and thyme), salt, and pepper. Mix well to form a flavorful herb butter.
Pat the chicken dry with paper towels. Gently loosen the skin of the chicken breast with your fingers, creating a pocket. Spread half of the herb butter mixture under the skin, directly onto the chicken breast meat. Rub the remaining herb butter all over the outside of the chicken.
Place the lemon halves inside the cavity of the chicken. This will infuse the chicken with a subtle citrus aroma as it roasts.
Place the chicken on the prepared roasting rack in the roasting pan. Roast in the preheated oven for about 45 minutes to 1 hour, or until the chicken is cooked through and the juices run clear when a thermometer inserted into the thickest part of the thigh reaches 165°F (74°C).
Once the chicken is cooked, remove it from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful chicken.

The chicken was good, but the skin didn't get as crispy as I would have liked. I might try a higher oven temperature next time to see if that helps.
