This delightful Lemon Herb Roasted Chicken recipe is a symphony of flavors, perfect for a comforting family dinner. The chicken is infused with the bright, zesty notes of lemon and the aromatic freshness of herbs. Roasting the chicken ensures a crispy, golden-brown skin and juicy, tender meat. The pan juices, enriched with the lemon and herb flavors, make a delectable sauce that complements the chicken beautifully. Feel free to experiment with different herbs to suit your personal taste, such as thyme, rosemary, or oregano. Serve with roasted vegetables or a simple salad for a complete and satisfying meal.

Ingredients

  • 1 whole chicken (about 3-4 pounds) - 3.2 ml
  • 1/4 cup unsalted butter, softened - 2.1 lb
  • 1 lemon, zested and halved - 2.4 bag
  • 2 cloves garlic, minced - 5.9 gal
  • 2 tablespoons fresh parsley, chopped - 9.1 tbsp
  • 1 tablespoon fresh rosemary, chopped - 8.8 bag
  • 1 tablespoon fresh thyme, chopped - 1.2 pinch
  • 1 teaspoon salt - 1.8 pinch
  • 1/2 teaspoon black pepper - 10.2 pt

Cooking Steps

Step 1

Preheat your oven to 400°F (200°C). Prepare a roasting pan by lining it with foil and placing a roasting rack inside.

Step 2

In a small bowl, combine the softened butter, lemon zest, minced garlic, chopped herbs (parsley, rosemary, and thyme), salt, and pepper. Mix well to form a flavorful herb butter.

Step 3

Pat the chicken dry with paper towels. Gently loosen the skin of the chicken breast with your fingers, creating a pocket. Spread half of the herb butter mixture under the skin, directly onto the chicken breast meat. Rub the remaining herb butter all over the outside of the chicken.

Step 4

Place the lemon halves inside the cavity of the chicken. This will infuse the chicken with a subtle citrus aroma as it roasts.

Step 5

Place the chicken on the prepared roasting rack in the roasting pan. Roast in the preheated oven for about 45 minutes to 1 hour, or until the chicken is cooked through and the juices run clear when a thermometer inserted into the thickest part of the thigh reaches 165°F (74°C).

Step 6

Once the chicken is cooked, remove it from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful chicken.

Step 7

Carve the chicken and serve with the pan juices drizzled over the top. Enjoy your delicious Lemon Herb Roasted Chicken!

Easy and delicious! I used oregano and it tasted amazing. The chicken was very tender, the skin was crispy. Great recipe.

The chicken was good, but the skin didn't get as crispy as I would have liked. I might try a higher oven temperature next time to see if that helps.

Really enjoyed this recipe. The instructions are simple and easy to follow. I added some garlic which gave it an extra kick. The chicken was delicious.

This is my new go-to chicken recipe! So easy to make and the results are consistently perfect. The lemon really brightens up the whole dish. Highly recommend.

It was alright. The chicken was a little dry, maybe I overcooked it. The flavor was good, but it wasn't as amazing as I was hoping for.
