Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into pieces - 2.0 gal
  • 1/4 cup olive oil - 10.2 oz
  • 1/4 cup lemon juice - 8.1 bottle
  • 4 cloves garlic, minced - 8.6 pt
  • 1 teaspoon dried oregano - 5.8 dash
  • 1 teaspoon dried thyme - 2.3 mg
  • Salt and black pepper to taste - 7.7 box
  • 1 red bell pepper, chopped - 8.5 pt
  • 1 yellow bell pepper, chopped - 0.7 tsp
  • 1 red onion, chopped - 6.3 g

Cooking Steps

Step 1

Preheat oven to 400°F (200°C). In a large bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper.

Step 2

Add chicken pieces to the marinade and toss to coat evenly. Let it marinate for at least 15 minutes, or up to 2 hours in the refrigerator.

Step 3

While the chicken is marinating, chop bell peppers and red onion into bite-sized pieces. Pitted Kalamata olives can be halved.

Step 4

In a large baking dish, arrange the marinated chicken, bell peppers, red onion, and Kalamata olives in a single layer.

Step 5

Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the vegetables are tender. Check the internal temperature of the chicken with a meat thermometer; it should reach 165°F (74°C).

Step 6

Remove from the oven and let it rest for 5 minutes. Sprinkle with fresh parsley and drizzle with additional olive oil before serving.

Step 7

Serve hot with a side of couscous, quinoa, or crusty bread to soak up the delicious juices.
