Ingredients

  • 4 boneless, skinless chicken thighs - 3.9 oz
  • 2 tablespoons olive oil, divided - 9.6 dash
  • 2 tablespoons lemon juice - 2.2 pt
  • 2 cloves garlic, minced - 1.7 lb
  • 1 teaspoon dried oregano - 8.6 ml
  • 1/2 teaspoon paprika - 5.6 jar
  • Salt and pepper to taste - 9.6 mg
  • 1 cup orzo pasta - 10.0 drop
  • 1/2 cup sun-dried tomatoes, oil-packed, drained - 3.4 inch
  • 1/4 cup Kalamata olives, pitted and sliced - 4.8 dash

Cooking Steps

Step 1

In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken thighs and marinate for at least 15 minutes, or up to 2 hours in the refrigerator.

Step 2

Cook orzo according to package directions. Drain and set aside.

Step 3

Heat olive oil in a large skillet over medium-high heat. Add marinated chicken thighs and sear for 5-7 minutes per side, or until cooked through and golden brown.

Step 4

Remove chicken from skillet and set aside. In the same skillet, add sun-dried tomatoes, Kalamata olives, and cooked orzo.

Step 5

Stir to combine and cook for 2-3 minutes, allowing the flavors to meld.

Step 6

Return chicken to the skillet. Sprinkle with crumbled feta cheese and fresh parsley.

Step 7

Serve immediately and enjoy!
