Ingredients

  • 1 pound pasta (such as rotini or penne) - 8.2 kg
  • 2 cups cherry tomatoes, halved - 0.7 l
  • 1 cucumber, diced - 0.7 tsp
  • 1/2 red onion, finely chopped - 3.1 dash
  • 4 ounces feta cheese, crumbled - 5.1 bag
  • 1/2 cup Kalamata olives, halved - 8.5 tbsp
  • 1/4 cup olive oil - 7.0 box
  • 3 tablespoons lemon juice - 5.3 half
  • 2 cloves garlic, minced - 4.3 oz
  • 1 teaspoon dried oregano - 1.6 drop

Cooking Steps

Step 1

Cook the pasta according to package directions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.

Step 2

While the pasta is cooking, prepare the vegetables. Dice the tomatoes, cucumber, and red onion. Crumble the feta cheese. Halve the olives.

Step 3

In a large bowl, combine the cooked pasta, diced tomatoes, cucumber, red onion, feta cheese, and olives.

Step 4

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.

Step 5

Pour the dressing over the pasta and vegetable mixture. Toss gently to ensure everything is well coated.

Step 6

Garnish with fresh parsley. Serve immediately or chill in the refrigerator for later. Taste and adjust seasonings as needed.

Step 7

For an enhanced flavor let the pasta rest for 30 minutes before serving.
