Ingredients

  • 1 red bell pepper, chopped - 4.4 cup
  • 1 yellow bell pepper, chopped - 1.7 cup
  • 1 zucchini, chopped - 6.1 dash
  • 1 red onion, chopped - 3.0 kg
  • 3 tablespoons olive oil, divided - 5.7 l
  • Salt and pepper to taste - 9.6 mg
  • 1 teaspoon dried oregano - 1.7 package
  • 2 tablespoons lemon juice - 6.0 can
  • 1 clove garlic, minced - 7.6 box
  • 2 tablespoons chopped fresh parsley - 4.4 drop

Cooking Steps

Step 1

Preheat oven to 400°F (200°C). Chop the bell peppers, zucchini, and red onion into bite-sized pieces.

Step 2

In a large bowl, toss the chopped vegetables with 2 tablespoons of olive oil, salt, pepper, and dried oregano. Spread them in a single layer on a baking sheet.

Step 3

Roast the vegetables for 25-30 minutes, or until they are tender and slightly caramelized, flipping halfway through.

Step 4

While the vegetables are roasting, prepare the lemon-herb dressing. In a small bowl, whisk together the lemon juice, remaining olive oil, minced garlic, chopped fresh parsley, chopped fresh mint, salt, and pepper.

Step 5

Cut the halloumi cheese into 1/4-inch thick slices. Heat a non-stick skillet over medium heat. Cook the halloumi slices for 2-3 minutes per side, or until golden brown and slightly softened.

Step 6

In a large serving bowl, combine the roasted vegetables and cooked halloumi.

Step 7

Pour the lemon-herb dressing over the salad and toss gently to combine. Serve warm or at room temperature.
