Ingredients

  • 8 bone-in, skin-on chicken pieces (thighs and drumsticks) - 1.2 cm
  • 2 tablespoons olive oil - 4.1 mg
  • 1 teaspoon salt - 2.3 dash
  • 1/2 teaspoon black pepper - 3.0 lb
  • 1 teaspoon ground ginger - 2.5 inch
  • 1 teaspoon turmeric - 6.6 kg
  • 1/2 teaspoon cinnamon - 7.7 half
  • Pinch of saffron threads - 4.1 box
  • 1 large onion, chopped - 1.4 box
  • 2 cloves garlic, minced - 9.8 mg

Cooking Steps

Step 1

In a large bowl, combine the chicken pieces with olive oil, salt, pepper, ginger, turmeric, cinnamon, and saffron. Mix well to coat the chicken evenly.

Step 2

Heat olive oil in a tagine or large Dutch oven over medium heat. Brown the chicken on all sides. Remove the chicken and set aside.

Step 3

Add the onion and garlic to the tagine and cook until softened, about 5 minutes. Add the diced tomatoes and cook for another 5 minutes.

Step 4

Return the chicken to the tagine. Add the chicken broth, apricots, and honey. Bring to a simmer, then reduce heat to low, cover, and cook for 30 minutes, or until the chicken is cooked through.

Step 5

Stir in the almonds and parsley. Cook for another 5 minutes.

Step 6

Serve hot over couscous or with crusty bread. Garnish with extra almonds and parsley, if desired.
