
In a large bowl, combine the lamb with 1 tablespoon olive oil, ginger, cinnamon, turmeric, cumin, salt, and pepper. Mix well to coat the lamb evenly. Let it marinate for at least 30 minutes.
Heat the remaining olive oil in a large tagine or Dutch oven over medium-high heat. Brown the lamb in batches, ensuring not to overcrowd the pot. Remove the lamb and set aside.
Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the garlic and cook for another minute until fragrant.
Return the lamb to the pot. Add the chicken broth, dried apricots, honey, and saffron threads (if using). Bring to a simmer, then reduce the heat to low, cover, and cook for 2 hours, or until the lamb is very tender.
While the tagine is simmering, prepare the couscous according to package directions.
Once the tagine is ready, stir in the toasted almonds and fresh cilantro.
Serve the lamb tagine over a bed of fluffy couscous. Garnish with extra toasted almonds and cilantro, if desired. Enjoy!
Five stars! This Moroccan Lamb Tagine is a winner. The flavors are so well-balanced, and the apricots add a wonderful chewy texture and sweetness. It's a perfect dish for a special occasion or a cozy night in. The best tagine I've ever made.
The tagine was good, but not outstanding. I felt like it needed a bit more acidity, maybe some lemon juice. The lamb was a little tough. I would try marinating the lamb next time to help with tenderness.
Very good, but it took a while to cook. The lamb was tender and the flavors were complex. I added a pinch of cayenne pepper for a bit of heat. Overall, a satisfying and delicious meal. Will make it again.
A very enjoyable tagine. The aroma while it was cooking was incredible. I had to adjust the cooking time slightly, but the end result was fantastic. The couscous was the perfect accompaniment. Great recipe!
