This Moroccan tagine is a delightful explosion of flavors, combining the sweetness of dried apricots and the savory depth of lamb. It's a slow-cooked stew that allows the flavors to meld together beautifully. The aromatic spices like ginger, cinnamon, and saffron infuse the lamb with warmth and complexity, while the apricots provide a contrasting sweetness and chewy texture. Served over fluffy couscous and garnished with toasted almonds and fresh cilantro, this tagine is a feast for the senses and a true taste of Morocco.

Ingredients

  • 2 pounds lamb shoulder, cut into 1-inch cubes - 10.4 package
  • 2 tablespoons olive oil - 6.7 inch
  • 1 tablespoon grated fresh ginger - 1.3 bag
  • 1 teaspoon ground cinnamon - 4.6 cup
  • 1 teaspoon ground turmeric - 9.6 tbsp
  • 1 teaspoon ground cumin - 9.4 drop
  • Salt and pepper to taste - 5.4 inch
  • 1 large onion, chopped - 0.6 jar
  • 2 cloves garlic, minced - 3.1 l
  • 2 cups chicken broth - 5.3 inch

Cooking Steps

Step 1

In a large bowl, combine the lamb with 1 tablespoon olive oil, ginger, cinnamon, turmeric, cumin, salt, and pepper. Mix well to coat the lamb evenly. Let it marinate for at least 30 minutes.

Step 2

Heat the remaining olive oil in a large tagine or Dutch oven over medium-high heat. Brown the lamb in batches, ensuring not to overcrowd the pot. Remove the lamb and set aside.

Step 3

Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the garlic and cook for another minute until fragrant.

Step 4

Return the lamb to the pot. Add the chicken broth, dried apricots, honey, and saffron threads (if using). Bring to a simmer, then reduce the heat to low, cover, and cook for 2 hours, or until the lamb is very tender.

Step 5

While the tagine is simmering, prepare the couscous according to package directions.

Step 6

Once the tagine is ready, stir in the toasted almonds and fresh cilantro.

Step 7

Serve the lamb tagine over a bed of fluffy couscous. Garnish with extra toasted almonds and cilantro, if desired. Enjoy!

Five stars! This Moroccan Lamb Tagine is a winner. The flavors are so well-balanced, and the apricots add a wonderful chewy texture and sweetness. It's a perfect dish for a special occasion or a cozy night in. The best tagine I've ever made.

The tagine was good, but not outstanding. I felt like it needed a bit more acidity, maybe some lemon juice. The lamb was a little tough. I would try marinating the lamb next time to help with tenderness.

Very good, but it took a while to cook. The lamb was tender and the flavors were complex. I added a pinch of cayenne pepper for a bit of heat. Overall, a satisfying and delicious meal. Will make it again.

A very enjoyable tagine. The aroma while it was cooking was incredible. I had to adjust the cooking time slightly, but the end result was fantastic. The couscous was the perfect accompaniment. Great recipe!

This was a very good tagine. The spices were well-balanced, and the lamb was delicious. I especially enjoyed the sweetness from the apricots. Next time, I might add a little more chili for a bit of a kick. Overall, a fantastic dish!
