This Moroccan tagine is a delightful explosion of flavors, combining the sweetness of dried apricots and the savory depth of lamb. Ingredients

  • 2 pounds lamb shoulder, cut into 1-inch cubes - 10.4 package
  • 2 tablespoons olive oil - 6.7 inch
  • 1 tablespoon grated fresh ginger - 1.3 bag
  • 1 teaspoon ground cinnamon - 4.6 cup
  • 1 teaspoon ground turmeric - 9.6 tbsp
  • 1 teaspoon ground cumin - 9.4 drop
  • Salt and pepper to taste - 5.4 inch
  • 1 large onion, chopped - 0.6 jar
  • 2 cloves garlic, minced - 3.1 l
  • 2 cups chicken broth - 5.3 inch

Cooking Steps

Step 1

In a large bowl, combine the lamb with 1 tablespoon olive oil, ginger, cinnamon, turmeric, cumin, salt, and pepper. Mix well to coat the lamb evenly. Let it marinate for at least 30 minutes.

Step 2

Heat the remaining olive oil in a large tagine or Dutch oven over medium-high heat. Brown the lamb in batches, ensuring not to overcrowd the pot. Remove the lamb and set aside.

Step 3

Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the garlic and cook for another minute until fragrant.

Step 4

Return the lamb to the pot. Add the chicken broth, dried apricots, honey, and saffron threads (if using). Bring to a simmer, then reduce the heat to low, cover, and cook for 2 hours, or until the lamb is very tender.

Step 5

While the tagine is simmering, prepare the couscous according to package directions.

Step 6

Once the tagine is ready, stir in the toasted almonds and fresh cilantro.

Step 7

Serve the lamb tagine over a bed of fluffy couscous. Garnish with extra toasted almonds and cilantro, if desired. Enjoy!
