Ingredients

  • 2 lbs bone-in, skin-on chicken pieces (thighs and drumsticks) - 1.2 quarter
  • 1 tsp salt - 3.9 as needed
  • 1/2 tsp black pepper - 2.2 pt
  • 1 tsp ground ginger - 6.5 half
  • 1 tsp ground cumin - 1.3 mg
  • 1 tsp ground coriander - 8.6 quarter
  • 1/2 tsp turmeric - 5.3 dash
  • Pinch of saffron threads - 3.0 qt
  • 2 tbsp olive oil - 1.3 kg
  • 1 large onion, chopped - 7.4 dash

Cooking Steps

Step 1

In a large bowl, combine the chicken pieces with salt, pepper, ginger, cumin, coriander, turmeric, and saffron. Mix well to ensure the chicken is evenly coated with the spices.

Step 2

Heat olive oil in a large tagine or Dutch oven over medium heat. Add the seasoned chicken and brown on all sides. Remove the chicken from the pot and set aside.

Step 3

Add the chopped onion to the pot and sauté until softened and translucent. Stir in the minced garlic and continue to cook for another minute until fragrant.

Step 4

Return the chicken to the pot. Add the chicken broth, cinnamon stick, and lemon preserves. Bring to a simmer, then reduce the heat, cover, and cook for 30 minutes, or until the chicken is tender.

Step 5

Stir in the dried apricots and olives. Continue to simmer for another 15 minutes, allowing the flavors to meld together.

Step 6

While the tagine is simmering, toast the slivered almonds in a dry pan over medium heat until golden brown. Watch carefully to prevent burning.

Step 7

Garnish the tagine with toasted almonds and fresh cilantro before serving. Serve hot with couscous or crusty bread.
