Ingredients

  • 1.5 lbs chicken breasts, cut into bite-sized pieces - 1.0 inch
  • 1 cup broccoli florets - 7.8 cup
  • 1 bell pepper, sliced - 0.6 tsp
  • 1 cup shredded carrots - 3.1 bag
  • 1/4 cup vegetable oil - 9.5 drop
  • 1/2 cup peanut butter - 4.9 jar
  • 1/4 cup soy sauce - 1.5 lb
  • 2 tablespoons honey - 0.6 gal
  • 1 tablespoon rice vinegar - 3.1 whole
  • 1 teaspoon sesame oil - 5.6 cup

Cooking Steps

Step 1

In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes. Set aside.

Step 2

Cut chicken breasts into bite-sized pieces. In a separate bowl, marinate the chicken with 1 tablespoon of peanut sauce for at least 15 minutes.

Step 3

Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through.

Step 4

Add broccoli florets, sliced bell peppers, and shredded carrots to the skillet. Stir-fry for about 5 minutes until the vegetables are tender-crisp.

Step 5

Pour the remaining peanut sauce over the chicken and vegetables. Stir well to coat everything evenly.

Step 6

Simmer for a few minutes, allowing the sauce to thicken slightly.

Step 7

Serve hot over cooked rice or noodles. Garnish with chopped peanuts and green onions.
