Ingredients

  • 1 sheet of puff pastry, thawed - 0.7 pinch
  • 1 zucchini, chopped - 3.1 half
  • 1 red bell pepper, chopped - 4.0 tsp
  • 1 yellow bell pepper, chopped - 8.6 cm
  • 1 red onion, thinly sliced - 3.5 to taste
  • 1 cup cherry tomatoes, halved - 2.2 half
  • 2 cloves garlic, minced - 2.1 pt
  • 2 tablespoons olive oil - 7.1 pt
  • 1 teaspoon dried herbs (such as thyme, oregano, or rosemary) - 8.9 gal
  • Salt and pepper to taste - 1.5 cup

Cooking Steps

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Prepare the vegetables: Wash and chop the vegetables into evenly sized pieces. In a large bowl, toss them with olive oil, salt, pepper, and herbs.

Step 3

Roast the vegetables: Spread the seasoned vegetables in a single layer on the prepared baking sheet. Roast for 25-30 minutes, or until they are tender and slightly caramelized, flipping halfway through.

Step 4

Prepare the puff pastry: While the vegetables are roasting, gently unfold the puff pastry sheet on a lightly floured surface. Roll it out slightly to fit your tart pan or baking sheet.

Step 5

Assemble the tart: Transfer the puff pastry to a baking sheet lined with parchment paper. Once the vegetables are roasted, arrange them artfully over the puff pastry, leaving a small border around the edges.

Step 6

Bake the tart: Bake in the preheated oven for 15-20 minutes, or until the puff pastry is golden brown and crispy.

Step 7

Drizzle with balsamic glaze: Remove the tart from the oven and let it cool slightly. Drizzle generously with balsamic glaze before serving. Garnish with fresh basil or parsley, if desired. Slice and serve warm.
