Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare the vegetables: Wash and chop the vegetables into evenly sized pieces. In a large bowl, toss them with olive oil, salt, pepper, and herbs.
Roast the vegetables: Spread the seasoned vegetables in a single layer on the prepared baking sheet. Roast for 25-30 minutes, or until they are tender and slightly caramelized, flipping halfway through.
Prepare the puff pastry: While the vegetables are roasting, gently unfold the puff pastry sheet on a lightly floured surface. Roll it out slightly to fit your tart pan or baking sheet.
Assemble the tart: Transfer the puff pastry to a baking sheet lined with parchment paper. Once the vegetables are roasted, arrange them artfully over the puff pastry, leaving a small border around the edges.
Bake the tart: Bake in the preheated oven for 15-20 minutes, or until the puff pastry is golden brown and crispy.
Drizzle with balsamic glaze: Remove the tart from the oven and let it cool slightly. Drizzle generously with balsamic glaze before serving. Garnish with fresh basil or parsley, if desired. Slice and serve warm.
This is a fantastic recipe! It's easy to customize with your favorite vegetables. The balsamic glaze is the star of the show. A definite keeper!
A very enjoyable tart. I used a variety of different colored peppers which looked lovely. The balsamic glaze provided a lovely tangy sweetness to the dish.
Really enjoyed this tart. I added some feta cheese on top, which paired well with the vegetables and glaze. A great vegetarian option.
The tart was decent. I found the vegetables a bit too soft after roasting, even though I kept a close watch on the timer. Perhaps a higher roasting temperature would help.
Very good! The tart was a hit with the family. I added some garlic to the vegetables while roasting, and it added a lovely aroma and taste. Will be making this again soon.
