Heat olive oil in a paella pan over medium heat. Add chicken and chorizo, cook until browned. Remove and set aside.
Add onions, bell peppers, and garlic to the pan. Sauté until softened, about 5 minutes.
Stir in tomato paste and smoked paprika. Cook for 1 minute more.
Add the rice and saffron. Stir to coat the rice with the mixture.
Pour in the chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes, without stirring.
Arrange shrimp, mussels, and clams over the rice. Add the cooked chicken and chorizo back to the pan. Cover and cook for another 10-15 minutes, or until the seafood is cooked and the rice is tender.
Let the paella rest for 5 minutes before serving. Garnish with lemon wedges and parsley.
Absolutely fantastic! The flavors were incredible, and the socarrat was perfectly crispy. I followed the recipe exactly and it turned out beautifully. The combination of seafood and chorizo is a winner. Will definitely make this again!
This recipe is a keeper! The combination of seafood, chicken, and chorizo creates a perfect harmony of flavors. The paella was a huge hit at my dinner party. Thank you for sharing this wonderful recipe.
It was a decent paella, but I found it a bit bland. I think I'll try adding more seasoning next time, maybe some chili flakes for a kick. The rice was cooked well, though, and the variety of seafood was great.
Very tasty paella. I substituted chicken for chorizo because of dietary restrictions, and it still tasted great. The saffron gave the rice a lovely color, and the presentation was beautiful. Highly recommended.
A decent paella, but it required a lot of attention to prevent the rice from sticking. The taste was good, but the overall experience was a bit stressful.
