
In a large paella pan or skillet, heat olive oil over medium heat. Add chicken and chorizo and cook until browned. Remove from pan and set aside.
Add onion, bell pepper, and garlic to the pan and cook until softened.
Stir in tomato paste, smoked paprika, saffron, and rice. Cook for 1 minute.
Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
Add shrimp, mussels, and clams to the pan. Nestle the cooked chicken and chorizo into the rice.
Cover and cook until seafood is cooked through and rice is tender, about 10-15 minutes.
Garnish with parsley and lemon wedges. Serve hot.
Best paella recipe I've ever tried! The saffron really makes a difference. The presentation was also beautiful.

I had a difficult time getting the rice right. It was either undercooked or overcooked. The flavor was alright, but I was disappointed with the texture.
