Ingredients

  • 1.5 lbs chicken breasts, boneless, skinless - 9.5 lb
  • 2 tbsp vegetable oil - 4.6 cup
  • 2-3 tbsp red curry paste (adjust to taste) - 8.1 drop
  • 1 can (13.5 oz) coconut milk - 10.3 package
  • 1/2 cup chicken broth - 2.3 ml
  • 1 tbsp brown sugar - 6.5 as needed
  • 1 tbsp fish sauce - 4.0 as needed
  • 1 red bell pepper, sliced - 0.9 whole
  • 1 green bell pepper, sliced - 9.1 mg
  • 1 can (8 oz) bamboo shoots, drained - 5.9 kg

Cooking Steps

Step 1

Cut the chicken breasts into bite-sized pieces. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken and cook until browned on all sides.

Step 2

Add the red curry paste to the skillet and cook for about 1 minute, stirring constantly, until fragrant. This will enhance the flavor of the curry paste.

Step 3

Pour in the coconut milk and chicken broth. Stir well to combine. Add the brown sugar and fish sauce. Bring to a simmer.

Step 4

Add the sliced bell peppers, bamboo shoots, and peas to the skillet. Cook for about 5-7 minutes, or until the vegetables are tender-crisp.

Step 5

Stir in the lime juice and chopped cilantro. Taste and adjust seasonings as needed.

Step 6

Serve the Thai Red Curry Chicken hot with steamed jasmine rice. Garnish with extra cilantro and a lime wedge.
