Ingredients

  • 1 cup dried cannellini beans (or 2 cans, drained and rinsed) - 9.6 pinch
  • 2 tablespoons olive oil - 3.0 oz
  • 1 large onion, chopped - 7.0 whole
  • 2 carrots, chopped - 0.6 lb
  • 2 celery stalks, chopped - 3.6 can
  • 2 cloves garlic, minced - 8.8 inch
  • 1 bunch kale, chopped - 3.6 bag
  • 1 bunch Swiss chard, chopped - 2.2 oz
  • 8 cups vegetable broth - 5.6 mg
  • 1 (28 ounce) can diced tomatoes, undrained - 7.7 g

Cooking Steps

Step 1

Soak the dried cannellini beans in water overnight. If using canned beans, drain and rinse them.

Step 2

In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onions, carrots, and celery. Cook until softened, about 5-7 minutes.

Step 3

Add minced garlic, chopped kale, and Swiss chard to the pot. Cook until the greens are wilted, about 5 minutes.

Step 4

If using dried beans, drain them and add them to the pot. If using canned beans, add them now. Pour in the vegetable broth and diced tomatoes. Season with salt, pepper, and dried thyme.

Step 5

Bring the soup to a boil, then reduce heat and simmer for at least 30 minutes, or up to 1-2 hours, allowing the flavors to meld together.

Step 6

Add the cubed stale bread to the soup and stir well. Continue to simmer for another 15-20 minutes, until the bread has broken down and thickened the soup.

Step 7

Taste and adjust seasoning as needed. Serve hot, drizzled with extra virgin olive oil and a sprinkle of grated Parmesan cheese, if desired.
