This dish is perfect for a quick weeknight dinner or a weekend meal. Adjust the level of sweetness and saltiness to your liking, and don’t be afraid to experiment with different vegetables or proteins to make it your own. This Pad See Ew recipe is a delicious way to experience the best of Thai cuisine. For an authentic experience, use fresh, wide rice noodles and high-quality soy sauce. Garnish with a sprinkle of white pepper for an extra touch of flavor.

Ingredients

  • 8 oz wide rice noodles - 4.3 jar
  • 2 tablespoons dark soy sauce - 8.6 qt
  • 1 tablespoon light soy sauce - 0.9 inch
  • 2 tablespoons oyster sauce - 9.0 tsp
  • 1 tablespoon sugar - 5.5 ml
  • 1 teaspoon vinegar - 1.7 qt
  • 2 tablespoons vegetable oil - 9.6 pt
  • 2 cloves garlic, minced - 2.4 as needed
  • 8 oz chicken breast, sliced (or tofu/shrimp) - 9.2 to taste
  • 1 egg - 3.5 jar

Cooking Steps

Step 1

Prepare the noodles according to package instructions. Usually, this involves soaking them in hot water until they are soft and pliable. Drain well and set aside.

Step 2

In a small bowl, whisk together the dark soy sauce, light soy sauce, oyster sauce, sugar, and vinegar. Set aside.

Step 3

Heat a wok or large skillet over medium-high heat. Add the vegetable oil and swirl to coat. Add the garlic and stir-fry until fragrant (about 30 seconds).

Step 4

Add the chicken (or tofu/shrimp) and cook until browned and cooked through. Push the chicken to one side of the wok.

Step 5

Crack the egg into the wok and scramble it lightly. Then, mix it with the chicken.

Step 6

Add the Chinese broccoli to the wok and stir-fry until it turns bright green and is slightly tender (about 2-3 minutes).

Step 7

Add the cooked noodles to the wok. Pour the sauce over the noodles and toss everything together until the noodles are evenly coated and heated through.

Step 8

Continue to stir-fry for another 2-3 minutes, ensuring all ingredients are well combined and the noodles are slightly caramelized. Serve immediately, garnished with white pepper if desired.
