
In a large paella pan or skillet, heat olive oil over medium heat. Add chicken and chorizo, cook until browned on all sides. Remove from pan and set aside.
Add onion, bell pepper, and garlic to the pan. Sauté until softened, about 5 minutes. Stir in tomato paste and cook for another minute.
Add rice to the pan and stir to coat with the vegetable mixture. Pour in chicken broth and add saffron threads, smoked paprika, and salt. Bring to a boil.
Reduce heat to low, return chicken and chorizo to the pan. Arrange shrimp, mussels, and clams over the rice, pushing them slightly into the mixture.
Cover the pan and simmer for 20-25 minutes, or until the rice is cooked and the seafood is opened. Do not stir during this time.
Remove from heat and let it rest, covered, for 10 minutes. Garnish with fresh parsley and lemon wedges. Serve immediately.

Not a fan. The rice was undercooked and the dish lacked seasoning. Maybe I messed something up, but I won't be trying this recipe again.
A delicious paella! I followed the recipe closely, and the flavors were wonderful. The only issue I had was getting the socarrat right, but I'll keep practicing. Definitely making this again!
