Ingredients

  • 1 tbsp olive oil - 9.5 jar
  • 1 lb chicken pieces, bone-in, skin-on - 5.0 pt
  • 4 oz chorizo, sliced - 8.7 oz
  • 1 onion, chopped - 1.6 pinch
  • 1 bell pepper, chopped - 6.5 as needed
  • 2 cloves garlic, minced - 7.2 pinch
  • Pinch of saffron threads - 10.2 cm
  • 1 tsp smoked paprika - 7.9 g
  • Salt to taste - 3.4 as needed
  • 1 cup paella rice - 2.8 pt

Cooking Steps

Step 1

In a large paella pan or skillet, heat olive oil over medium-high heat. Add the chicken pieces and chorizo slices. Cook until browned on all sides.

Step 2

Add the chopped onion, bell pepper, and garlic to the pan. Sauté until the vegetables are softened.

Step 3

Stir in the saffron threads, smoked paprika, and salt. Cook for another minute to release the flavors.

Step 4

Add the paella rice and stir to coat with the mixture. Pour in the chicken broth and bring to a boil.

Step 5

Reduce the heat to low, cover the pan, and simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.

Step 6

Stir in the frozen peas and cook for another 5 minutes. Garnish with fresh parsley and lemon wedges before serving.

Step 7

Let the paella rest for 5-10 minutes before serving.
