Marinate the chicken pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Let it rest for at least 30 minutes.
Soak basmati rice in water for 30 minutes. Drain and set aside.
In a heavy-bottomed pot, heat ghee and oil. Add sliced onions and fry until golden brown. Remove half of the onions and set aside for garnish.
Add the marinated chicken to the pot and cook until it's partially cooked.
Layer half of the rice over the chicken, followed by saffron-infused milk, chopped cilantro, and mint leaves.
Add the remaining rice and top with the reserved fried onions, saffron milk, cilantro, and mint.
Cover the pot tightly and cook on low heat for 45 minutes, or until the rice is fully cooked and the chicken is tender. Serve hot with raita.
Incredible! This recipe is a winner. The saffron-infused milk made the rice incredibly fragrant and flavorful. Every mouthful was a delight. It's perfect for entertaining guests!
Really enjoyed this biryani! The caramelized onions added a wonderful sweetness. I added a bit more chili for extra heat, as I prefer spicy food. Overall, a great recipe and good value.
This is a showstopper recipe! The balance of spices is perfect, and the slow cooking method really enhances the flavors. It's a bit of a project, but so worth the effort. Highly recommend!
I was disappointed. The chicken was a bit dry, and the rice seemed a little overcooked. I'm not sure what went wrong. I might try it again, but I'll need to adjust the cooking time.
A really good recipe. The rice was cooked to perfection, and the chicken was very tender. The herbs added a lovely freshness. I'll be making this again soon.
