Marinate the chicken pieces with ginger-garlic paste, yogurt, turmeric powder, red chili powder, garam masala, and salt. Let it marinate for at least 2 hours.
Soak basmati rice in water for 30 minutes. Drain the water and set aside.
In a large pot, heat ghee or oil. Add sliced onions and fry until golden brown. Remove half of the fried onions and set aside for garnish.
Add marinated chicken to the pot and cook until it's partially done.
Layer the rice over the chicken. Add saffron soaked in milk, chopped cilantro, mint leaves, and the remaining fried onions.
Cover the pot tightly with a lid or aluminum foil. Cook on low heat for 45 minutes, or until the rice is fully cooked and the chicken is tender.
Gently fluff the biryani with a fork and serve hot. Garnish with extra cilantro and fried onions.
It was okay. The flavor was there, but the rice was a bit dry. I might need to adjust the cooking time. Overall, it was a decent weeknight meal.
I made this for a dinner party, and it was a huge hit! Everyone loved it. The instructions were easy to follow, and the result was fantastic. I did add a pinch of saffron for color, and it looked beautiful.
Good, but not great. The chicken was a little dry, and the rice could have used a bit more flavor. I followed the recipe as described, but I think maybe a longer marinating time for the chicken would help. Overall, it was still a decent meal.
