In a shallow dish, combine breadcrumbs, grated Parmesan cheese, garlic powder, dried oregano, dried basil, salt, and black pepper.
In another shallow dish, whisk eggs. Dredge each chicken cutlet in the flour, then dip in the egg mixture, and finally coat thoroughly with the breadcrumb mixture.
Heat olive oil in a large skillet over medium-high heat. Cook chicken cutlets for 3-4 minutes per side, until golden brown and cooked through. Do this in batches to avoid overcrowding the pan.
Place the cooked chicken cutlets in the prepared baking dish. Top each cutlet with tomato sauce and a slice of mozzarella cheese.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
Garnish with fresh basil leaves before serving. Serve hot with spaghetti or your favorite pasta.
Pretty good. The chicken was a bit too oily after frying, but the taste was good. I might try baking the chicken next time to reduce the oil.

Very tasty! I added a pinch of red pepper flakes to the sauce for a little kick. My only suggestion is to make sure your oil is hot enough when frying the chicken.
