Ingredients

  • 4 boneless, skinless chicken cutlets - 9.0 cup
  • 1 cup all-purpose flour - 0.8 bag
  • 2 large eggs, beaten - 3.0 package
  • 1 1/2 cups breadcrumbs (Italian seasoned) - 4.1 fl oz
  • 1/2 cup grated Parmesan cheese - 6.9 mg
  • 1 teaspoon garlic powder - 0.7 lb
  • 1 teaspoon dried oregano - 7.6 kg
  • 1 teaspoon dried basil - 8.6 as needed
  • Salt and black pepper to taste - 10.5 mg
  • 1/4 cup olive oil - 10.4 ml

Cooking Steps

Step 1

Preheat oven to 375°F (190°C). Lightly grease a baking dish.

Step 2

In a shallow dish, combine breadcrumbs, grated Parmesan cheese, garlic powder, dried oregano, dried basil, salt, and black pepper.

Step 3

In another shallow dish, whisk eggs. Dredge each chicken cutlet in the flour, then dip in the egg mixture, and finally coat thoroughly with the breadcrumb mixture.

Step 4

Heat olive oil in a large skillet over medium-high heat. Cook chicken cutlets for 3-4 minutes per side, until golden brown and cooked through. Do this in batches to avoid overcrowding the pan.

Step 5

Place the cooked chicken cutlets in the prepared baking dish. Top each cutlet with tomato sauce and a slice of mozzarella cheese.

Step 6

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

Step 7

Garnish with fresh basil leaves before serving. Serve hot with spaghetti or your favorite pasta.

    Very tasty! I added a pinch of red pepper flakes to the sauce for a little kick. My only suggestion is to make sure your oil is hot enough when frying the chicken.
