In a large bowl, season the chicken pieces generously with salt and pepper. Dredge them lightly in flour, shaking off any excess.
In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Brown the chicken pieces in batches, being careful not to overcrowd the pot. Remove the chicken and set aside.
Add the bacon to the pot and cook until crisp. Remove the bacon and set aside, leaving the rendered fat in the pot. Add the onions and carrots to the pot and cook until softened, about 5-7 minutes.
Add the mushrooms to the pot and cook until browned, about 5 minutes. Stir in the garlic and tomato paste and cook for 1 minute more.
Pour in the red wine and bring to a simmer, scraping up any browned bits from the bottom of the pot. Add the chicken broth, thyme, and bay leaf. Return the chicken and bacon to the pot.
Bring the mixture to a simmer, then reduce the heat to low, cover, and simmer for 1 1/2 to 2 hours, or until the chicken is very tender.
Remove the chicken from the pot and set aside. Increase the heat to medium-high and simmer the sauce until it has reduced and thickened slightly, about 10-15 minutes. Return the chicken to the pot and heat through. Garnish with fresh parsley before serving.
Very tasty dish! The mushrooms were cooked perfectly. Next time, I'll probably add a bit more onion for extra flavor. Great comfort food.
Very happy with this recipe! Chicken was nice and tender. Sauce was perfect. Would make this again.
Absolutely fantastic! The chicken was so tender, and the sauce was incredibly flavorful. My family devoured it. Will definitely make this again.
The recipe was a bit disappointing. The chicken was overcooked, and the sauce was bland. Followed the instructions carefully, but it didn't turn out well for me.
Really enjoyed this recipe. The flavors were complex and delicious. Served it with mashed potatoes as suggested, and it was perfect.
