In a large bowl, season the chicken pieces generously with salt and pepper. Dredge them lightly in flour, shaking off any excess.
In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Brown the chicken pieces in batches, being careful not to overcrowd the pot. Remove the chicken and set aside.
Add the bacon to the pot and cook until crisp. Remove the bacon and set aside, leaving the rendered fat in the pot. Add the onions and carrots to the pot and cook until softened, about 5-7 minutes.
Add the mushrooms to the pot and cook until browned, about 5 minutes. Stir in the garlic and tomato paste and cook for 1 minute more.
Pour in the red wine and bring to a simmer, scraping up any browned bits from the bottom of the pot. Add the chicken broth, thyme, and bay leaf. Return the chicken and bacon to the pot.
Bring the mixture to a simmer, then reduce the heat to low, cover, and simmer for 1 1/2 to 2 hours, or until the chicken is very tender.
Remove the chicken from the pot and set aside. Increase the heat to medium-high and simmer the sauce until it has reduced and thickened slightly, about 10-15 minutes. Return the chicken to the pot and heat through. Garnish with fresh parsley before serving.
The best coq au vin I've ever made! The recipe was easy to follow, and the results were outstanding. Perfectly balanced flavors. Highly recommend!
It was a good attempt, but not quite as good as I had hoped. The sauce needed a bit more seasoning, and the chicken could have been a bit more flavorful.
This recipe is a keeper! The instructions were clear, and the final dish was restaurant-quality. The red wine sauce was simply divine. A perfect meal for a cold evening.
This was a really good coq au vin. The bacon added a lovely smoky flavor. I added a bay leaf, which I think enhanced the depth of the sauce even more. Easy to follow recipe.
It was okay. The chicken was a little dry, and I thought the sauce could have been thicker. Might try again with some adjustments.
