Ingredients

  • 1.5 lbs bone-in, skin-on chicken pieces (thighs and drumsticks) - 4.8 qt
  • Salt and pepper to taste - 0.8 pt
  • 2 tablespoons olive oil - 4.0 pinch
  • 2 shallots, thinly sliced - 5.4 pcs
  • 2 cloves garlic, minced - 0.6 ml
  • 8 oz cremini mushrooms, sliced - 2.9 dash
  • 1 cup dry white wine (such as Sauvignon Blanc or Pinot Grigio) - 0.8 can
  • 1 cup chicken broth - 2.8 bag
  • 1/2 cup crème fraîche - 1.4 dash
  • Pinch of saffron threads - 8.2 quarter

Cooking Steps

Step 1

Season chicken pieces with salt and pepper. In a large skillet or Dutch oven, heat olive oil over medium-high heat. Sear chicken on all sides until golden brown. Remove chicken from skillet and set aside.

Step 2

Add sliced shallots, minced garlic, and sliced mushrooms to the skillet. Sauté until softened and lightly browned, about 5-7 minutes.

Step 3

Pour in dry white wine, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 5 minutes, allowing the alcohol to evaporate.

Step 4

Return chicken to the skillet. Add chicken broth. Bring to a simmer, then reduce heat to low, cover, and cook for 30-35 minutes, or until chicken is cooked through.

Step 5

Stir in crème fraîche and saffron threads. Simmer for another 5 minutes, allowing the sauce to thicken slightly and the saffron to infuse its flavor and color.

Step 6

Taste and adjust seasoning with salt and pepper as needed.

Step 7

Garnish with fresh parsley, if desired. Serve hot with crusty bread, rice, or mashed potatoes.
