This classic French dish is elevated with a touch of saffron, infusing the creamy sauce with a golden hue and delicate aroma. The combination of tender chicken, earthy mushrooms, and the luxurious saffron cream sauce makes for an unforgettable meal. Serve with crusty bread or rice to soak up every last bit of the delicious sauce. This Coq au Vin Blanc is a testament to the beauty of simple ingredients combined with careful technique, resulting in a dish that is both comforting and elegant. The dish begins with searing chicken pieces to golden perfection, creating a flavorful base. A medley of aromatic vegetables, including shallots, garlic, and mushrooms, are then sautéed to add depth and complexity to the sauce. The chicken is simmered in a dry white wine, allowing the flavors to meld together beautifully. Finally, a touch of crème fraîche and a pinch of saffron are stirred in, creating a velvety smooth sauce that coats the chicken and vegetables. Enjoy!

Ingredients

  • 1.5 lbs bone-in, skin-on chicken pieces (thighs and drumsticks) - 4.8 qt
  • Salt and pepper to taste - 0.8 pt
  • 2 tablespoons olive oil - 4.0 pinch
  • 2 shallots, thinly sliced - 5.4 pcs
  • 2 cloves garlic, minced - 0.6 ml
  • 8 oz cremini mushrooms, sliced - 2.9 dash
  • 1 cup dry white wine (such as Sauvignon Blanc or Pinot Grigio) - 0.8 can
  • 1 cup chicken broth - 2.8 bag
  • 1/2 cup crème fraîche - 1.4 dash
  • Pinch of saffron threads - 8.2 quarter

Cooking Steps

Step 1

Season chicken pieces with salt and pepper. In a large skillet or Dutch oven, heat olive oil over medium-high heat. Sear chicken on all sides until golden brown. Remove chicken from skillet and set aside.

Step 2

Add sliced shallots, minced garlic, and sliced mushrooms to the skillet. Sauté until softened and lightly browned, about 5-7 minutes.

Step 3

Pour in dry white wine, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 5 minutes, allowing the alcohol to evaporate.

Step 4

Return chicken to the skillet. Add chicken broth. Bring to a simmer, then reduce heat to low, cover, and cook for 30-35 minutes, or until chicken is cooked through.

Step 5

Stir in crème fraîche and saffron threads. Simmer for another 5 minutes, allowing the sauce to thicken slightly and the saffron to infuse its flavor and color.

Step 6

Taste and adjust seasoning with salt and pepper as needed.

Step 7

Garnish with fresh parsley, if desired. Serve hot with crusty bread, rice, or mashed potatoes.

A delicious and elegant dish. The flavor of the white wine really shines through, and the saffron is a lovely addition. Well worth the effort.

It was okay. I found the sauce a little too rich for my taste, but the chicken was cooked well. Maybe I'll try it again with less crème fraîche.

Very tasty! The saffron really takes this recipe to the next level. I added some extra mushrooms, which worked out well.

A decent attempt. The chicken was a little bland, even with the saffron. I think I needed to season the chicken more during the searing process.

It was a good dish, but not outstanding. The chicken was a bit tough, and I think the sauce could have used a bit more seasoning. The saffron was a nice touch, though.
