Ingredients

  • 2 pounds fresh tomatoes - 1.7 pt
  • 1 medium onion, chopped - 2.9 gal
  • 3 cloves garlic, minced - 5.4 as needed
  • 2 tablespoons olive oil - 5.5 cup
  • 1 teaspoon salt - 1.0 pcs
  • 1/2 teaspoon black pepper - 0.7 kg
  • 1 teaspoon Italian herbs - 10.2 pt
  • 4 cups vegetable broth - 2.5 jar
  • 1/2 cup heavy cream - 5.2 pinch
  • 1 teaspoon sugar (optional) - 1.2 mg

Cooking Steps

Step 1

Preheat your oven to 400°F (200°C). Quarter the tomatoes and roughly chop the onion and garlic.

Step 2

On a baking sheet, toss the tomatoes, onion, and garlic with 2 tablespoons of olive oil, salt, pepper, and Italian herbs.

Step 3

Roast in the preheated oven for 30 minutes, or until the tomatoes are softened and slightly caramelized.

Step 4

Transfer the roasted vegetables to a blender or food processor. Add the vegetable broth and blend until smooth.

Step 5

Pour the blended soup into a pot and heat over medium heat. Stir in the heavy cream and sugar (if using). Taste and adjust seasoning as needed.

Step 6

Simmer for 10-15 minutes, stirring occasionally, to allow the flavors to meld.

Step 7

Serve hot, garnished with fresh basil leaves and a drizzle of olive oil. Optionally, serve with grilled cheese or crusty bread.
