
Preheat your oven to 400°F (200°C). Quarter the tomatoes and roughly chop the onion and garlic.
On a baking sheet, toss the tomatoes, onion, and garlic with 2 tablespoons of olive oil, salt, pepper, and Italian herbs.
Roast in the preheated oven for 30 minutes, or until the tomatoes are softened and slightly caramelized.
Transfer the roasted vegetables to a blender or food processor. Add the vegetable broth and blend until smooth.
Pour the blended soup into a pot and heat over medium heat. Stir in the heavy cream and sugar (if using). Taste and adjust seasoning as needed.
Simmer for 10-15 minutes, stirring occasionally, to allow the flavors to meld.
Serve hot, garnished with fresh basil leaves and a drizzle of olive oil. Optionally, serve with grilled cheese or crusty bread.
This soup is absolutely divine! The creaminess is perfect, and the flavor is so rich. I added a pinch of red pepper flakes for a little heat, and it was a fantastic addition. Will definitely be making this again!
It was okay. I found the soup a bit bland, even after adding salt and pepper. Maybe I didn't roast the tomatoes long enough. I think it could use a little more depth of flavor.
A very solid tomato soup. I loved the simplicity of the recipe. Roasting the tomatoes really brings out their sweetness. Next time, I might add a bit more herbs, but overall, a great recipe.

I'm not sure what went wrong, but my soup tasted a bit burnt. I followed the recipe, but maybe my oven was too hot. I'll try again, but I'm a little disappointed this time.
