Preheat your oven to 400°F (200°C). Quarter the tomatoes and roughly chop the onion and garlic.
On a baking sheet, toss the tomatoes, onion, and garlic with 2 tablespoons of olive oil, salt, pepper, and Italian herbs.
Roast in the preheated oven for 30 minutes, or until the tomatoes are softened and slightly caramelized.
Transfer the roasted vegetables to a blender or food processor. Add the vegetable broth and blend until smooth.
Pour the blended soup into a pot and heat over medium heat. Stir in the heavy cream and sugar (if using). Taste and adjust seasoning as needed.
Simmer for 10-15 minutes, stirring occasionally, to allow the flavors to meld.
Serve hot, garnished with fresh basil leaves and a drizzle of olive oil. Optionally, serve with grilled cheese or crusty bread.
Simple, yet elegant. The soup has a wonderful, velvety texture. I paired it with a crusty bread, and it was perfect for a cold evening. Will make it again.
The soup was good, but nothing extraordinary. It was a bit too sweet for my taste. I might try reducing the amount of cream next time to balance the flavors.
Fantastic! This soup is so comforting and delicious. I made a big batch and froze some for later. The roasting step is key to unlocking the flavor. Love it!
Easy to follow and the result is a very satisfying soup. I added some grilled cheese croutons on top. The flavor is great, although it could use a bit more acidity, maybe a splash of balsamic vinegar.
Pretty good. I found the soup to be a little on the sweet side, but it was still enjoyable. I think it needs a bit more seasoning, like maybe some dried basil. I might experiment with some variations next time.
