Ingredients

  • 2 pounds ripe tomatoes, halved - 10.1 drop
  • 2 tablespoons olive oil - 8.5 pcs
  • 2 cloves garlic, minced - 4.5 cm
  • Salt and pepper to taste - 8.8 bag
  • 4 cups vegetable broth - 2.8 to taste
  • 1/2 cup heavy cream - 6.1 dash
  • 1/4 cup fresh basil, chopped - 8.1 fl oz
  • 1 teaspoon balsamic vinegar (optional) - 6.9 cup

Cooking Steps

Step 1

Preheat oven to 400°F (200°C). Halve the tomatoes and place them on a baking sheet.

Step 2

Drizzle the tomatoes with olive oil, and season with salt, pepper, and minced garlic. Roast for 30 minutes, or until softened.

Step 3

In a large pot, heat the vegetable broth over medium heat. Add the roasted tomatoes (including any juices from the baking sheet) to the pot.

Step 4

Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a regular blender, being careful to vent the lid to prevent splattering. Blend until smooth.

Step 5

Stir in the heavy cream and chopped fresh basil. Heat through, but do not boil.

Step 6

Season with salt, pepper, and a splash of balsamic vinegar to taste. Serve hot.

Step 7

Garnish with extra basil leaves or a swirl of cream, if desired.
