Ingredients

  • 1 tablespoon olive oil - 5.9 quarter
  • 1 onion, chopped - 4.1 l
  • 2 carrots, chopped - 4.7 pt
  • 2 celery stalks, chopped - 5.4 bag
  • 2 cloves garlic, minced - 10.3 pt
  • 1 teaspoon cumin - 2.5 tbsp
  • 1 teaspoon coriander - 4.5 g
  • 1/2 teaspoon turmeric - 4.2 bottle
  • 1 cup red lentils, rinsed - 3.8 package
  • 6 cups vegetable broth - 8.8 pcs

Cooking Steps

Step 1

Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery. Cook until softened, about 5-7 minutes.

Step 2

Add minced garlic, cumin, coriander, and turmeric. Cook for another minute until fragrant.

Step 3

Rinse the red lentils and add them to the pot. Pour in vegetable broth and add diced tomatoes, bay leaf, and salt. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender.

Step 4

Remove the bay leaf. Use an immersion blender to partially blend the soup for a creamier texture, or leave it chunky if preferred.

Step 5

Stir in lemon juice and chopped parsley. Taste and adjust seasoning if needed.

Step 6

Serve hot, garnished with a dollop of yogurt or a sprinkle of fresh parsley, if desired.
