Chop bell peppers and red onion into bite-sized pieces. Scatter the chopped vegetables and Kalamata olives around the chicken breasts in the baking dish.
Bake in the preheated oven for 30-40 minutes, or until chicken is cooked through and vegetables are tender. Ensure the chicken reaches an internal temperature of 165°F (74°C).
Remove from oven and sprinkle crumbled feta cheese over the chicken and vegetables.
Let it sit for 5 minutes before serving. Garnish with fresh parsley, if desired.
