Ingredients

  • 1 whole chicken (about 3-4 pounds) - 5.4 g
  • 2 tablespoons olive oil - 3.4 whole
  • 1 lemon, zested and juiced, plus 2 lemon halves - 7.4 cm
  • 2 cloves garlic, minced - 4.7 ml
  • 2 tablespoons fresh rosemary, chopped - 3.3 jar
  • 2 tablespoons fresh thyme, chopped - 3.5 gal
  • Salt and pepper to taste - 7.0 mg
  • 1 cup chopped vegetables (carrots, potatoes, onions) - 6.5 whole

Cooking Steps

Step 1

Preheat your oven to 400°F (200°C). Pat the chicken dry with paper towels. This helps the skin crisp up nicely.

Step 2

In a small bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, salt, and pepper. Mix well.

Step 3

Rub the herb mixture all over the chicken, including under the skin of the breast. Place the lemon halves inside the cavity of the chicken.

Step 4

Place the chicken in a roasting pan. Arrange the chopped vegetables around the chicken.

Step 5

Roast for about 45 minutes to 1 hour, or until the internal temperature of the chicken reaches 165°F (74°C) in the thickest part of the thigh. Baste the chicken with pan juices every 15-20 minutes.

Step 6

Remove the chicken from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful chicken.

Step 7

Carve the chicken and serve with the roasted vegetables and pan juices. Garnish with fresh herbs if desired.
