
Preheat your oven to 400°F (200°C). Pat the chicken dry with paper towels. This helps the skin crisp up nicely.
In a small bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, salt, and pepper. Mix well.
Rub the herb mixture all over the chicken, including under the skin of the breast. Place the lemon halves inside the cavity of the chicken.
Place the chicken in a roasting pan. Arrange the chopped vegetables around the chicken.
Roast for about 45 minutes to 1 hour, or until the internal temperature of the chicken reaches 165°F (74°C) in the thickest part of the thigh. Baste the chicken with pan juices every 15-20 minutes.
Remove the chicken from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful chicken.
Carve the chicken and serve with the roasted vegetables and pan juices. Garnish with fresh herbs if desired.
Great recipe! Easy to follow and the chicken turned out really well. I added a little extra garlic, which I think enhanced the flavor even more. The only thing I would suggest is perhaps a slightly more detailed description of how to prep the herbs.
Excellent recipe, very easy to make and the results were fantastic. The skin was wonderfully crispy, and the chicken was very flavorful. The suggestion to dry the chicken before roasting made a big difference. Highly recommended.
