Ingredients

  • 1 whole chicken (about 4-5 pounds) - 7.4 pcs
  • 2 lemons, one zested and sliced, one quartered - 9.9 pinch
  • 4 cloves garlic, minced - 1.8 tsp
  • 2 tablespoons olive oil - 3.7 cm
  • 2 tablespoons fresh rosemary, chopped - 2.9 lb
  • 2 tablespoons fresh thyme, chopped - 4.0 l
  • 1 tablespoon fresh sage, chopped - 6.7 inch
  • 1 onion, quartered - 7.2 lb
  • 2 carrots, chopped - 2.6 inch
  • 2 celery stalks, chopped - 3.5 box

Cooking Steps

Step 1

Preheat your oven to 400°F (200°C). Prepare a roasting pan by lining it with foil and placing a roasting rack inside.

Step 2

In a small bowl, mix together the olive oil, lemon zest, minced garlic, chopped rosemary, thyme, and sage. Season generously with salt and pepper.

Step 3

Rinse the chicken inside and out, and pat it dry with paper towels. Place the chicken in the prepared roasting pan.

Step 4

Rub the herb mixture all over the chicken, making sure to get under the skin of the breast and thighs. Place lemon slices inside the cavity of the chicken.

Step 5

Arrange the chopped vegetables around the chicken in the roasting pan. Drizzle the vegetables with olive oil and season with salt and pepper.

Step 6

Roast the chicken for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh. Baste the chicken with pan juices every 20 minutes.

Step 7

Let the chicken rest for 10 minutes before carving and serving with the roasted vegetables and pan juices.
